A recipe for sloe gin
Freeze the sloes for 48 hours. This breaks the cells down inside the sloes and helps with extracting the flavour.
Take an empty bottle. Add frozen sloes until it is about a third full.
Add demerera sugar until it is about two thirds full.
Fill up with gin but leave a gap at the top.
Shake vigorously for a few minutes. Put in a cool dark place.
Shake every day for a week, every week for a month and every month for a year.
Filter before drinking.
