Rich fruit cake

A recipe for a rich and moist fruit cake.

275g self raising flour
3 large eggs
175g butter
110g dark brown sugar
1125g mixed dried fruit
1 teaspoon cinnamon
1 teaspoon mixed spice
1/2 teaspoon nutmeg
50g cherries
50g ground almonds
1 cup water
1 generous tot of brandy

Put fruit, water, butter and sugaring a saucepan and bring to the boil. Simmer gently for 5 minutes.
Beat eggs in a basin and add together with the other ingredients.
Stir well and allow mixture to cool.
Turn mixture into a greased and lined cake tin.

Cook for 30 minutes at 150 degrees Celsius and then a further 2 hours at 140 degrees Celsius. A skewer inserted into the cake should come out clean when the cake is cooked.
