Individual gratins of courgettes, onions and tomatoes.
Ingredients (serves 4):
300g finely chopped onions
150g cherry tomatoes
7.5cm metal cooking rings
Set oven to 180 degrees Celsius (160 degrees Celsius for a fan oven)
Sweat 300g finely chopped onions in 50ml olive oil. Put one quarter in each of the 4 metal cooking rings.
Slice and blanche 200g courgettes. Slice 150g cherry tomatoes.
Arrange courgette and tomato slices over the onions, alternating them in a circle. Season, sprinkle with breadcrumbs and chopped thyme, and sprinkle with olive oil.
Bake for about 10 minutes. Remove metal ring before serving.
